Gluten free cookie cake recipe (NEW)

Made with easy-to-find ingredients, it bakes up moist, tender, and full of flavor, making it the perfect treat for birthdays, gatherings, or just when you’re craving something sweet. Once it’s cooled, you can add your favorite frosting on top—whether that’s a classic buttercream, cream cheese frosting, or even a whipped chocolate ganache—to give it the look and taste of a traditional cake. You can also decorate it with sprinkles, candies, or even a drizzle of melted chocolate to make it extra festive and fun.

Can I make this with other flour?

This recipe will work with regular flour. however, I have not tested it with different gluten-free flours, so try to find a 1:1 replacement flour.

In the bowl of a stand mixer, cream white sugar, brown sugar, and butter together on a medium speed.

Mix in vanilla extract and egg on a medium speed. You can scrape down the bowl if needed.

Combine flour, salt, baking powder, and baking soda on a low speed.

Mix in the chocolate and the sprinkles at the lowest speed that your mixer has.

On a floured surface, use a rolling pin with flour on it to roll out the cookie dough, making it about the size of the cake pan.

Put cookie dough into an 8-inch cake pan lined with parchment paper.

Bake the cookie cake at 350°F for 35 minutes.

Take out of the oven and let cool before frosting.

Make it using 2 sticks of butter and 100g of powdered sugar

1/2 cup brown sugar

1/2 tsp baking powder

1/4 tsp baking soda

1 egg

1/2 tsp vanilla extract

1/4 tsp salt

1/2 cup chocolate chips

1 1/2 cup Bob's Red Mill 1 to 1 Gluten Free Baking Flour

2 tbsp rainbow sprinkles
