In the bowl of a stand mixer, mix pumpkin puree, cream cheese, powdered sugar, nutmeg, and syrup until well combined

Use a 2-tablespoon scoop and scoop 9 scoops of Cream cheese mixture onto a plate or tray. Put the tray in the Freezer for 2 hours.

In the bowl of a stand mixer, cream white sugar, brown sugar, and butter together on a medium speed.

Mix in vanilla extract and egg on a medium speed. You can scrape down the bowl if needed.

Mix in flour, salt, baking powder, and baking soda on a low speed.

On a floured surface, use a rolling pin with flour on it to roll out cookie dough.

Using a glass or a cookie cutter, cut out cookies

Cut scoops of filling in half

Take a cookie and lay it flat on the table, and place the ball of filling on it. Place another cut-out cookie on top of that and press and roll the edges to seal it. (If this step is confusing, watch the video)

Put the cookies in the freezer for 45 minutes

Heat oven to 350°F

Put Cookies on a baking sheet and bake for 20 minutes

Let cool before removing from the cookie sheet

7 oz pumpkin puree

1 tbsp of pumpkin spice syrup (optional but delicious)

4 tbsp powder sugar

1 tbsp cinnamon

1 block cream cheese

Filling

1/2 cup butter

1/4 Cup sugar

1/2 cup brown sugar

1/2 tsp baking powder

1/4 tsp baking soda

1 egg

1/2 tsp vanilla extract

1/4 tsp salt

1 1/2 cup flour

2 tsp pumpkin pie spice

2 tsp cinnamon

2 tsp nutmeg
